Grapes from the rainfed vineyards are harvested in the first fortnight of October, once reaching the optimal point of maturity.

Fermentation happens at a controlled temperature of 26ºC with the previous maceration at 12ºC. This highly refined process occurs over three days with the objective of extracting all the aromatic potential of the grapes. Our fermentation processes combine the sophistication of modern methods with the knowledge that only traditional techniques can provide.

Tasting Notes: A bright, pale yellow wine with delicate greenish highlights. The nose is fresh and aromatic, offering vibrant citrus and white flower notes. On the palate, it is youthful and lively, with a balanced structure and generous fruity character. Crisp and clean, this wine is perfect served well chilled on a warm day. An ideal companion to tapas, seafood, and Mediterranean dishes.
